I do the tri-fold, but I also fold down the back before folding it in thirds. It makes it fit better and it helps to catch the blow-out that likes to go up the back!!!
My favorite prefold is the Indian prefolds...I haven't used the Chinese one's yet, but have heard that they are great as well. I also use gerber birdseye prefolds that I use during the day, they aren't as absorbent for night time use. they were professionally tie dyed. It's kind of hard for me to say I have a "favorite" fold since my baby isn't even here yet! But the angel wing fold looks pretty easy for starters! :)
