My favorite fold is the flying angel wing. Just seems to stay on my little one the best, plus it give extra absorbency in the front where he needs it. :)

Baby isn't here yet so I haven't actually started CDing, but I want to try the sidewall fold. It looks like it creates a barrier so nothing can come out of the leg holes. But I'll probably try out many folds before figuring out what works best for us!
